NYC isn't known for it's quiet hotels. I can suggest though something like the 1871 House since there is a BACK room that does not face the street and it faces the backyard and another guest room. Great for pairs of couples.
I lived on Carmine Street in the Village and since it was a back apartment it was very quiet.
