Semi-dead thread, but...
Super Monkey Ball and Super Monkey Ball 2...you have to at least try them. The controls are simple and there's plenty of stuff for novices, but damn...if they're not a couple of the hardest games ever made at the upper levels, I'm not sure what would be.
