I also forgot to mention.... I buy lot's of Vidalias when they are in season, cut them up and freeze them. If you double bag and get the air out, they last for six months or more. Then, you can always grab a handful. Also, it's good to do the same thing with red and yellow bell peppers. Just get them when the prices are rock bottom, chop and freeze away.
