Recipe of the Day - December 8 (garlic chili prawns)
Garlic Chili Prawns
Ingredients
8 large prawn tails, de-shelled and de-veined
8 large garlic segments, thinly sliced
4 green chilies, finely chopped
1 large onion, thinly sliced
1 cup classic stock (broth)
3 Tbsp. tomato ketchup
1 Tbsp. vinegar
1 1/2 Tbsp. sugar
2 Tbsp. cooking oil
Salt to taste
Diluted cornflour to thicken
Chopped spring onion stem for garnish
Preparation
In a wok or frying pan, add oil and heat.
Add garlic and cook for a few minutes until very light brown. (about 60-90 seconds)
Add the sliced onions and green chilies and sauté until soft. (about one minute)
Add the prawn tails and toss in with the rest until they turn pinkish white. (about 5-6 minutes)
Add vinegar, sugar, salt and tomato ketchup and continue to toss for a few minutes. (about 1-2 minutes)
Add the stock and boil for a few minutes. (1-2 minutes)
Add cornflour until sauce thickens to desired consistency.
Garnish with freshly chopped spring onion stem and serve immediately.
