Recipe of the Day - December 8 (garlic chili prawns)
Garlic Chili Prawns
Ingredients 8 large prawn tails, de-shelled and de-veined 8 large garlic segments, thinly sliced 4 green chilies, finely chopped 1 large onion, thinly sliced 1 cup classic stock (broth) 3 Tbsp. tomato ketchup 1 Tbsp. vinegar 1 1/2 Tbsp. sugar 2 Tbsp. cooking oil Salt to taste Diluted cornflour to thicken Chopped spring onion stem for garnish Preparation In a wok or frying pan, add oil and heat. Add garlic and cook for a few minutes until very light brown. (about 60-90 seconds) Add the sliced onions and green chilies and sauté until soft. (about one minute) Add the prawn tails and toss in with the rest until they turn pinkish white. (about 5-6 minutes) Add vinegar, sugar, salt and tomato ketchup and continue to toss for a few minutes. (about 1-2 minutes) Add the stock and boil for a few minutes. (1-2 minutes) Add cornflour until sauce thickens to desired consistency. Garnish with freshly chopped spring onion stem and serve immediately. |

I doubt you'll get an answer from her now that she's gone...
I like to eat this dish in large portions with white rice, chinese pickles, and jasmine tea. It's probably best eaten family style with other chinese dishes, if you have the company. It also works as an appetizer on its own. |
