I got ama ibi, and there it comes with the deep-fried heads of the shrimp. I didn't eat them an the waitress came and said, "You didn't eat that? it's the best part." I thought it was a game--get the round-eye to eat the garnish, but she was serious. I ate them. Tasty. The second(long) antennae are a bit awkward, but it's neat.

It took a while before I tried uni because I had friends tell me it was gross. When I was sitting at a sushi bar the Itamae asked if ever tried uni, I said no and he promply put two in front of me. He said you must eat at least two or three before you can aquire a taste. The rest is history and uni is by far my favorite now.
He did the same thing to me for the ama ebi fried head too. It's a bit wierd but very tasty too.
I'd recommend sitting at the bar and try and get to know the guy making your food and try different stuff...you may even be given freebies
