Crab Cakes
A.K.A Crabby Patties (thanks SpongeBob)
Crab Cakes
1 Lg or 2 Sm cans of crab
1 C Italian breadcrumbs
1/3 C minced green onion
1/3 C chopped parsley
2 T lemon juice
4 oz. cream cheese (or more, I use 8oz)
salt, pepper, hot sauce (to taste)
3 egg whites
Mix and form patties
Mix 1 C Italian breadcrumbs with 3/4 C parmesan cheese. Dredge patties.
Heat Olive Oil & Canola Oil in skillet. Add minced garlic & capers (to taste). Saute garlic and capers. Either keep them in, or remove them before cooking the cakes.
Cook about 3 minutes on each side until golden.
