When I was still trying to put on weight while weight training, I cooked and ate a one-pound box of pasta with olive oil every night, along with lean meat, vegetables, etc. If you're training hard enough, it won't even be a chore.
Somebody mentioned peanut butter. Some bodybuilders I know treat peanut butter as a "good" fat, one that is healthier for the body than animal fat and to some degree encourages muscle growth.
