Mexican Stewed Tomatos
This easy side dish will surprise you with its zest.
Ingredients:
1/2 cup chopped onion
4 cloves garlic
2 cans stewed tomatos
1 tsp cumin
1/2 tsp coriander
Heat 2 tsp oil in a medium saucepan. Add chopped onion and garlic. Saute on medium heat until tender.
Strain tomatos, reserving liquid. Add liquid to saucepan. Reduce to a medium sauce. You should have about 1/3 of the original volume of liquid.
Add tomatoes, cumin and coriander. Heat and serve.
