My personal favorite was Day of the Dead. I know I'm in the minority, but i was unimpressed with Dawn. Day had some of the most memorable death scenes I can recall from any movie, like the lead soldier having his legs ripped from his body while taunting the zombies with "choke on 'em!!!".
As for the remake of Dawn, Rhames, Polley, and Pfifer have all done quite a few movies. And just by looking at those names, it looks like they are trying to "hip it up", and i would imagine your hip-hop/metal fears will probably come true.
