I would continue saying "hi" to people. If you say it to him again and he says the same thing then maybe say "no, I'm sorry, you are mistaken. I say hi to people all the time regardless of race. I am not racist and I do not appreciate being insulted - especially in response to a friendly greeting". Then just walk away.
