Below are two recipes for tuna melts and one for a grilled cheese sandwich. The open face recipe is more complex, but is worth the time to make. I guestimated the ingredient quantities because I can't find the original recipe I used online and I make the recipe by sight now. The second recipe is the most basic recipe for a tuna melt.
Open Face Tuna Melt
Time to make: 15-20 mins.
Makes 4-6 tuna melts depending on bread slice size
1/2 chopped onion
1-2 cloves chopped garlic (depending if you love garlic or not)
1 can well drained tuna
2-3 T. mayo
8 oz. cottage cheese (I prefer small curd)
slices of cheese (meunster or cheddar are good)
lightly toasted bread slices
butter
1. using a pan, sauté onion in butter, add garlic when onion is near desired consistency. i prefer my onion less crunchy, so i cook it for longer than most do. i think the average cook time is around 5 minutes or so.
2. once onion and garlic are cooked as desired, add 1 can of drained tuna. turn down heat as the tuna begins to warm up. stir thoroughly.
3. turn oven on broil.
4. making sure the temperature has cooled down to low heat, stir in cottage cheese. mix until the cottage cheese has blended/melted into tuna. mix in mayo.
5. place toast on oven sheet. put tuna mixture on top of the slices. then place a slice of cheese on top of each open face tuna melt.
6. place in oven and broil until the cheese is melted.
Quickie Tuna Melt
Mix tuna and mayo to desired consistency. Lightly toast bread slices. Place sliced cheese on one side of bread and microwave (or put in toaster oven) until cheese is melted. Put tuna mix on other side of bread. Assemble sides of bread. Voila! Tuna melt.
Grilled Cheese Sandwich
2 slices of bread
1-2 slices of cheese (usually cheddar)
butter
Lightly coat (or slather) slices of bread with half-melted butter. On medium-low heat, place slices of bread butter-side-down on pan and cook until barely brown. Add slices of cheese on top of one slice of bread. Flip other slice of bread over the cheese (so the butter side is visible) and continue heating until golden brown.
If you happen to have a waffle iron (I don't), you can pre-assemble the sandwich (buttered bread-cheese-buttered bread) and place it in the waffle iron. Hold down until cheese is melted and bread is light brown.
