Easy Sandwiches
This thread is in response to a specific request.
Reuben Sandwich (easy variation) Ingredients 2 slices rye bread 1 tablespoon butter, softened 2 ounces thinly sliced corned beef 2 ounces sauerkraut 1 slice mozzarella cheese Preparation Heat medium skillet over medium heat. Butter bread on one side. Place one slice of bread, buttered side down, in skillet. Layer corned beef, sauerkraut and mozzarella on bread. Top with remaining slice of bread. Cook, turning once, until bread is browned, sandwich is heated through and cheese is melted. Serve immediately. (note: Can also be made with Thousand Island dressing. You would put the dressing on after the sauerkraut and before the cheese. Just enough dressing that it doesn't become too sloppy.) Last edited by JadziaDax; 07-05-2003 at 02:51 AM.. |

Ingredients 2 slices pumpernickel bread 1/2 cup sliced, leftover corned beef 1/4 cup drained sauerkraut 1 tablespoon Thousand Island dressing 1 slice Swiss cheese Preparation Spread a slice of the bread with the Thousand Island dressing. Top with the corned beef, the Swiss cheese, and the sauerkraut. Top with the remaining slice of bread. In a preheated griddle or skillet, toast the sandwich on each side until lightly browned. If you do not like pumpernickel bread, Rye or Italian bread is a good substitute. |

Dressed-Up Tuna Salad
Ingredients 1 can tuna packed in spring water, drained and flaked 1/4 cup finely chopped apple 2 tablespoons chopped green onion 2 tablespoons chopped celery 1 tablespoon slivered almonds 3-4 tablespoons mayonnaise 1 tablespoon Dijon mustard Salt and pepper to taste Preparation Combine the tuna, apple, green onion, celery and almonds. Stir in the mayonnaise and mustard, adding more to make desired consistency. Season with salt and pepper. Serve as a sandwich filling or with crackers. |

my sandwich
Recently "invented" this. Get some fine-sliced ham, take about two or three slices and get some franks (weenies) of choice and chop them up. Toss them into the microwave for at least 40 seconds, or prepare however you wish, just make sure they're not cold Put on a bread. Pour some syrup all over it. Honey doesn't work, syrup is best for this. Any kind of syrup, perferrably your fav, but whatever's available. Can't get enough of these. I've never had anything to contribute to this board 'till now Anyways, enjoy

Below are two recipes for tuna melts and one for a grilled cheese sandwich. The open face recipe is more complex, but is worth the time to make. I guestimated the ingredient quantities because I can't find the original recipe I used online and I make the recipe by sight now. The second recipe is the most basic recipe for a tuna melt.
Open Face Tuna Melt Time to make: 15-20 mins. Makes 4-6 tuna melts depending on bread slice size 1/2 chopped onion 1-2 cloves chopped garlic (depending if you love garlic or not) 1 can well drained tuna 2-3 T. mayo 8 oz. cottage cheese (I prefer small curd) slices of cheese (meunster or cheddar are good) lightly toasted bread slices butter 1. using a pan, sauté onion in butter, add garlic when onion is near desired consistency. i prefer my onion less crunchy, so i cook it for longer than most do. i think the average cook time is around 5 minutes or so. 2. once onion and garlic are cooked as desired, add 1 can of drained tuna. turn down heat as the tuna begins to warm up. stir thoroughly. 3. turn oven on broil. 4. making sure the temperature has cooled down to low heat, stir in cottage cheese. mix until the cottage cheese has blended/melted into tuna. mix in mayo. 5. place toast on oven sheet. put tuna mixture on top of the slices. then place a slice of cheese on top of each open face tuna melt. 6. place in oven and broil until the cheese is melted. Quickie Tuna Melt Mix tuna and mayo to desired consistency. Lightly toast bread slices. Place sliced cheese on one side of bread and microwave (or put in toaster oven) until cheese is melted. Put tuna mix on other side of bread. Assemble sides of bread. Voila! Tuna melt. Grilled Cheese Sandwich 2 slices of bread 1-2 slices of cheese (usually cheddar) butter Lightly coat (or slather) slices of bread with half-melted butter. On medium-low heat, place slices of bread butter-side-down on pan and cook until barely brown. Add slices of cheese on top of one slice of bread. Flip other slice of bread over the cheese (so the butter side is visible) and continue heating until golden brown. If you happen to have a waffle iron (I don't), you can pre-assemble the sandwich (buttered bread-cheese-buttered bread) and place it in the waffle iron. Hold down until cheese is melted and bread is light brown.

Variation two on the reuben, but we used red cabbage (prepared with a little fat back salt & pepper) and a combo of pastrami and corned beef served open faced...mmmmm
Also love combo sandwichs (grilled chicken, grilled potobello mushrooms, roasted red peppers with some arugala or fresh basil leaves. Melt some mozzerella or fontina and sprinkle extra virgin olive oil and serve on foccia bread fresh out of the oven...Also use garlic bread...leave out the chicken and use grilled zuccini and onion and it is a grilled veggie sandwich. |

Use these ideas as jumping-off places for your own creativity. And keep sandwiches in mind when you cook: leftovers from the grill or the frying pan make great sandwiches the next day. 1. French Peasant Loaf Cut crusty French bread or baguette in half lengthwise, brush with olive oil or butter, and fill with thin slices of Gruyere cheese, a sprinkling of fresh thyme leaves, mesclun salad greens, salt and freshly-ground black pepper to taste. 2. Crunchy English Garden Rolls Slice tender white rolls in half, slather with mayonnaise or soy-mayonnaise, and fill with thinly-sliced radishes, thinly-sliced English cucumber, chopped scallions, watercress, and fresh or dried dill. 3. Hearty Tuscan Grill Fill wholegrain bread or rolls with leftover grilled vegetables--bell peppers, eggplant, zucchini or summer squash, tomatoes, onions. Drizzle with olive oil and fresh herbs. 4. Fruit Nut Delight Spread cashew or almond butter on the inside of a pita. Add fresh sliced peaches (leave whole until ready to serve, then slice and add to sandwich) or peach jam. Sprinkle with sunflower seeds, if you like. 5. Asian Surprise Saute onion, celery, garlic, ginger, and Asian greens (Chinese cabbage, bok choy, etc) in oil and soy sauce until tender. Add to inside of a pita spread lightly with peanut butter. 6. Calcutta Half-Moons Spread one half of a chapati or other Indian soft bread, flatbread, or pita with egg salad to which you have added curry powder to taste. Add lettuce and fold in half to serve. 7. Middle Eastern Peace Bagels Spread halved bagels with cream cheese and store-bought hummus or baba ghanouj, thinly-sliced cucumbers, chopped lettuce and tomato, and toasted sesame seeds. 8. Power House Place the following on a whole-wheat roll -- mayonnaise, sliced Monterey Jack cheese, alfalfa sprouts, sliced tomato, and a sprinkling of dried parsley, sage, rosemary, thyme, basil, and oregano. 9. Mexican Wrap Mix leftover cooked beans, shredded cheddar or Monterey Jack, chopped jalapeno chiles, chopped fresh tomatoes, salsa, sour cream, and chopped fresh cilantro in a wrap. 10. Portobello Sandwich Slice leftover grilled or pan-fried Portobello caps, toss with barbecue sauce or pesto mayonnaise, and add to your favorite bread with your choice of suggested toppings. |

it is so easy...
Cheese spread some spheghetti sauce on each slice of bread (french is best) add whatever you like on your pizza then put some you can pop it in the microwave if you want, or you can eat it cold.

My idea of an easy sandwich is some presliced bread and some bologna. Maybe a piece of cheese (invidiually wrapped, none of the stuff I actually have to cut) and mustard if I really feel like going all-out. |

Egg Sandwich:
1 English muffin, cut in half and toasted butter or mayo 4 slices salami 2 Poached eggs Pretty self explanatory. Toast the muffins, spread on some butter or mayo, put on 2 slices of salami on each, and top with a poached egg on each. Poaching eggs: Bring a poaching pot of water to boil, crack and pour the eggs into the egg cups, turn the heat down to low, and cook covered for 6 minutes or until the whites are no longer runny. It's delicious!

Here's my favorite thing to have for lunch:
wheat bread roll turkey breast cold cut slices pepper jack cheese lettuce oinions tomatos sprouts and a few drops of vinegar and oil over the sprouts. in that order. Very simple to make and takes about three minutes to get it all together. Not a bad recipe if you're counting calories either. Add some spicy lentil soup and some saltine crackers crumbs sprinkled over it and you're all set!

I've got a sandwich maker that is pretty awesome. Kinda like the waffle iron idea in the grilled cheese post, but it's made for sandwiches and cuts them diaginally. Pain in the ass to clean up though. Especially if the cheese melts over the side.

Chicken cheese yumminess...
Mix pulled chicken, melted monterey jack and a little bit of pesto together, put between two slices of bread (Coated with butter), then cook in a pan, as if you were making a grilled cheese sammich. Damn! It's only 10am and I want one now!

1 foccacia grilled chicken breast, butterflied 2 oz goat cheese 2 oz pesto sauce 2 oz organic greens (spring or mesclun mix) grill this one up - foreman-type grills are best - if not available, just toast the foccacia before make the sandwich up, or bake the whole thing on a cookie cheet at 350 degrees
