I'd be careful on the timing - as I remember women are most fertile 14 days BEFORE their next period - so for women with 'regular' cycles it's vaguely predictable as x days after their last period. However, if a woman has an irregular cycle you're not going to find it nearly so easy to guess!
Anyway, mtdewrock, you should be safe having sex during the pill free week (or placebo week) on a combined pill, so long as she starts taking the next packet on time. You only need to worry if she's not been taking the pills at the correct time, or has vomited/had severe diarrhoea/been taking a medication which interacts with it.
And in response to Greg700 - yes, the morning after pill can work up to 72 hours after unprotected intercourse. However, it becomes less and less reliable as the hours go by so if you need it, it's best to avoid any delay.
