This may or may not be your thing, but give Yngwie J. Malmsteen a try, especially his Concreto Suite album. I gotta agree with you about the FF7 music. The game kicks ass and so does its music

Also check out FF8 sound track. Same deal. FF9 and FF10 soundtrack are a bit weaker but still enjoyable. I think all their music is by... London Symphony Orchestra? Not sure.
