Looks like I've hit a gold mine of info on bread baking. Thanks for all the help!! I'll whip up a batch some time this weekend and will report back!
P.S. I'm just kidding about the masterbaker thing. I like to try out a lot of things and this is flavor of the month. 
Btw, where can I find a thermometer that goes up to several hundred degrees?
