Yes, I know about his girlfriend, I know about the interpretations, but this song, to me, represents living and enjoying the unpredictable, to make memories, to "Have The Time Of Your Life."
All to soon time (youth) will past you by and all you will be left with is the memories, make some good ones to last you the rest of your life, everyday. They will also give you lots to enjoy when you get older.
