True, but the cut stuff stays so nice and moist...I'm enjoying my fat little doe right now. Took her on opening day of rifle season, with my sporterised Steyr M-95 straight-pull, shooting a pet handload that did quite nicely. 206gr round-nose cast-lead bullet over 15.5gr of Hercules 2400 for around a grand, gives about 500fpe. At 50-75yrds, like plenty of the shots you get in these mountains, it does beautifully. This tasty little critter ran about sixty yards and piled up dead with no heart. We marinade in soy sauce, garlic, and red pepper, then dehydrate with more crushed red pepper sprinkled on.* GAWD this stuff is good!
