My understanding is that it's nitrogen that creates that great head every Guinness drinker has come to know and appreciate. So, how do you get it from a can?
. . . You pump the can full of nitrogen. *shrugs* They've talked several times about altering the amount of nitrogen they put in the cans, trying to adjust the head, but no one will hear of it. Apparently the head you get from a poured can of Guinness is at least comparable to regular draught.
