I have a DSLR but I still end up with washed-out looking images, even with my best lenses... I have a feeling something is wrong with the white-balance, so I'm trying to figure out how to fix it. I really don't know my way around the camera enough yet.
Would be so fun to shoot a wedding, though... why do you say that you wouldn't do it again?

It's probably not the white balance but your exposure value or aperature. White balance is more about color, not exposure. Many set the aperature to a larger opening than needed and don't pay any attention at all to their EV.
RJ, I really like the second one a lot.
If I had anything to add or suggest, it would be about the faces being dark in many but that can be fixed with the dodge tool in photoshop or lasso the face at a feathered level and adjust with levels or curves.
Good work and I agree...one wedding shoot was enough-never again.
