What happens is that you get picky about it. I had fantastic sushi in a couple places in Japan -- on the Japan Sea coast and up in Hokkaido. After that, i couldn't get excited about Tokyo sushi, and i'm sure that's generally much better than what you get abroad. I don't bother with it anymore because i know that here in the American midwest, i'll end up either disappointed or with food poisoning.
