well I'm not an expert... but his claw is probably stuck between the edge of the snail and its foot and the snail is holding its foot in place trying to be safe from the crayfish.
I would grasp the snails shell and the crayfish by his claw that is in the snail and gently pull... I cant imagine that its stuck with much force... the crayfish prolly just doesnt have much leverage. if you hold the crayfish from its body and pull it'll prolly pull its claw off.
if that doesnt work you could crunch the snail shell with some pliars...
or pull the crayfish's claw off... I've seen lots of em with only one claw...
