Not all EU countries use the Euro for currency. Of the original 15 EU countries, the UK, Denmark and Sweden do not use the Euro. In May 2004 10 new countries joined the EU and of those, only Slovenia switched to the Euro on January 1, 2007. Also on January 1, 2007 Romania and Bulgaria joined the EU, neither country is on the Euro.
Also I see your current itinerary has you going through Switzerland. Switzerland is not an EU member, that means that they do not use the Euro, and at the Swiss border you will have a passport check.

For that amount of time you are visiting way too many cities. Even if you travel on the high speed trains such as the Eurostar, ICE, TGV, or Thalys; you will still be forced spend way too short a time in each city. For example, Paris to Zurich without getting off anywhere along the way is about 6-8 hours using high speed trains.
