"Roasted" Plum Tomatoes
do this first thing in the morning of a beautiful day while the coffee is brewing
8 plum tomatoes - you can get away with beefsteaks - seeded and cut into bite size
4 tbsp fresh basil chopped - or - 2 tbls dried
2 sweet vadalia onions quartered
4 cloves garlic chopped
extra virgin olive oil to coat
romaine lettuce
1 loaf good crustini or french bread
in a bowl add all the ingredients - the basil, if dried, crush in the palms of your hands to bring the flavor out - and toss
pour it all in a shallow dish and add more olive oil so it's really soaked - you'll know how much
cover tightly with plastic wrap and leave it on the counter preferrably where the sun can hit it...
after you've mowed the lawn and finished your "honey-do" list get that bottle of red wine you've been saving and uncork it
arrange on a couple of salad plates the romaine and spoon out your "roasted" tomatoes - manja!!!
