I like the idea of the Pollock art station. That'll get messy so fast.
A few months ago, a friend of mine hoping to be an art therapist threw an art therapy night together, and had a bunch of art supplies for us to just go nuts on, inks, charcoal, crayons, even some oil-based paints. It was a blast.
What you seem to be going for is a bit more structured though...hmm...
Maybe some kind of jewelry making area? That's an artistic venture.
