Could she be messing with me? Even thought she was a complete bitch to me that last day, it's hard seeing someone be so evil and cruel. Should I just give her a chance, but be prepared for anything? I just find it kinda weird that each conversation involves her really wanting to see me.

I'm not a chick, but it seems to me that the most likely explanation is that her boyfriend called and offered her the moon after your second day together.
Now, two months later, they've split again. I say go for it, and behave with class, like you thought you should. If I'm right, she'll probably tell you the explanation for her behavior, especially if you tell her something like, "I was really disappointed not to see more of you after we had such a good time awhile back."
Summary: Maintain your cool, behave in a classy way, and see where it leads.
