A few years ago I went to one near Los Angeles (Not sure if it's the Buena Park one or not...). Anyway, the whole experience was so very unique. There's nothing like drinking out of a heavy metal mug (though they could have used free refills...ahem) and eating meat off the bone while everyone else around you is doing the same.
The show was fun, though I'd think it would get a little tedious after seeing it once or twice. Medieval Times is definatley a "touristy" attraction - something one doesn't frequent for just the last-minute stop and eat dinner. However, it should be a good addition to the Atlanta suburb and cause an increase in business. Hope y'all enjoy it!
