Mutliple logins would probably be the best option for the iChat thing, you don't even need to password them. To set it up:
Open System Preferences
Click on the Accounts button
Click the plus sign at the bottom
Enter the name, short name and password if wanted
Done! All the applications now will have separate preferences, favourites and whatnot.
