I use mainly DVD-Shrink myself. It's great and lets you tweak what you want and don't want compressed if copying a DVD9 movie. A program to use alongside it is AnyDVD which helps with a whole bunch of small things, but one big thing is that it bypasses any copy protection on the DVD if it has any.
As for burning the DVD after ripping with DVD Shrink, I just use Alcohol120 after I rip the DVD to an .iso file. Easy and works perfect so far.
