If you need something to take away with you then sandwiches are the business. I've been making them to take to work for the past three years but even so my range is not huge. Here are my favorites:
- Cheese with lettuce. And chutney or pickle (I use my mums homemade stuff). And cornbeef or ham.
- Tuna mayo - add a dash of vinegar and salt and pepper. Sweetcorn is good too.
- Egg mayo - add watercress and salt and pepper. Curry powder makes a nice change.
If you can get hold of a whole chicken then I like to boil it up (with carrots, celery, peppercorns, onion) for a couple of hours. Then you have a stock (chill, scrape slime off) which you can then use as the base for a soup or for cooking rice. You also have lots of tasty, tender, healthly cooked chicken to use in sandwiches. I like adding chopped celery and mayo and lots of black pepper.
Regarding sandwiches, even if you have the most expensive and tastiest filling it will taste rubbish if you don't have fresh, proper bread. The presliced stuff isn't worth it. Any sandwiche tastes good with decent bread.
