personally, i feel Borgata's is being completely fair about the situation. they seem to have thought about this from both the employer and employee's perspectives and come up with a rational solution.
first, they are applying it to both male and female employees. second, they aren't imposing a specific weight limit (which would definitely encourage eating disorders), but simply saying that employees should stay within 7% of their weight when they were hired... what's so horrible about that?
now if someone needs to develop an eating disorder to prevent themselves from gaining 7% of their body weight, then they have some other serious problem... those women's rights advocates need to rethink their claims.
