Actually, i think the percentage is higher than 90%. It was a rare day in hell when one of the iron chefs lost. When we first started watching the show a couple years ago, i went on the Fuji TV website (the producers of the show). The explanation given was that the iron chefs were, so to speak, 'tenured'; Therefore, the advantage almost exclusively went to the iron chefs. You can probably count on one hand the number of times an iron chef lost.
A few years ago, some chef from San Francisco beat Sakai in a lobster battle. but that's about it.
