The Farmer Boys are a band from Germany who sing in English. They have an incredible singer, who guest sang with Apocalyptica on "Hope Vol. 2" and they have I think 3 albums out, all of which are spectacular...it's got a touch of 80's pop in it...synth strings and keyboards and stuff...it's awesome!
Also, Joe Satriani, Dream Theater, Steve Vai- I've never heard them but they have a reputation of being very musical with great guitar tone.
