ewwwwwww white tuna is sooooo mushy.. and salmon is good, but mushy to cut. I hate skinning salmon because its all oily and soft. Damn all that for $16USD thats pretty cheap for all that
I know my sushi bar doesnt use talapia because I dont like talapia very much.. and I know the staff down there and Ive seen them clean whole fishes.
And they use yellowtail tuna.. which is $$$ but they sell soooo much sushi.. its amazing the place is always packed and I cant leave without dropping $25 or more. Even the beer, and tempura and snacks are very cheap
