If, for example, you do web work for someone:
If you control the FTP area of your employer, you could put up an image (randomly?) or text that tells any end users that pop by that you haven't been paid and until you have, that's what they will see. Politely (if you want!).
This way, they will view the website, see the message, and your employer will then have tomato on his face (so to speak). Tell him that you won't take it down until the contract terms have been met.
