Here's the 'recipe' I use for fried rice that my wife goes bonkers for:
One half large onion, chopped
2-5 cloves of garlic, minced
1-2 Tb FRESH ginger, minced
3/4 of one egg
about 1.5 cups of rice.
soy sauce
Coat the rice with the egg mixture, set aside.
Sweat the onions until they're a *bit* less cooked than you like them.
Add ginger, cook a bit longer.
Add garlic. careful not to burn.
Finaly, turn heat to high, toss in rice/egg, stir in soy sauce, continue stirring until done.
