Common practice in the Broadcast World, when doing man on the street interviews and the likes is the person looks into the camera, says their name, age a few other details and reads a disclaimer which says something like
"I (name) Understand I am being video taped for (whatever purpose) and give (whatever media company) the right to use and or distribute my likeness for this purpose and any related purpose in the future."
it, of course, never makes it on the air, but it prevents people from suing because they talked to a news crew when they should have been at work or were hanging out in front of a brothel... same should work in this situation too.
This could of course cut down on the pre-taped admissions, but as long as both (or all) involved hand over a clip to you with an added not for DL clip saying its all good and you can tell its the same people in the vid you should be in the clear.
