To beat Ruby it's a bit harder since he usually kills two party members in the beginning. Ruby = do it until Cloud is the last character, then have him do Omnislash with a mastered Mime materia like 10 times with Final Attack and Phoenix equipped. Over a million damage easily.

For Ruby, I found the best strategy is to kill 2 of your party members yourself before the battle and then equip the third, living member with the final attack-phoenix combo. Its been a while, but as I recall that puts ruby out of his nasty attack mode and into his manageable attack mode.
I also used turbo magic with mastered KOTR and w-summon - thats 26 9999's per turn, assuming you mime it. I beat Emerald without the underwater materia (meaning i had a 20 minute limit) with that strategy. The key to Emerald is to have lots of mp restoring items - he leaches MP and you'll go through a ton anyways, though if you use a hp<=>mp materia you can get a lot of casts off, and it doesnt' really matter because so many of Emerald's hits are instant kills anyways.
