I gotta recommend Eternal Darkness: Sanity's Requiem just like everyone else. Metroid Prime is easily the best game on GC if ya ask me, so you've definitely made some good choices already.

Skies of Arcadia is an amazing RPG, easily reaching Final Fantasy production qualities.
