Mrs. Field's® Cheesecake Brownie Cups
Ingredients
Filling
3 tablespoons softened butter
2 - 3oz package softened cream cheese
1/3 cup sugar
2 tablespoons flour
1 teaspoon vanilla
Brownie Batter
2 cups sugar
1 1/4 cups flour
1/4 teaspoon salt
6 tablespoons cocoa
4 beaten eggs
3/4 cups vegetable oil
1 teaspoon vanilla
Preparation
First make the cheesecake filling. Combine the first 5 ingredients in a medium sized mixing bowl. Use an electric mixer to thoroughly beat and mix the ingredients together, until a thick but smooth mixture results. Set it aside.
Preheat the oven to 350 degrees. Combine the last 7 ingredients in a large mixing bowl. Use an electric mixer to thoroughly blend the ingredients together until smooth and free of lumps. .
Reserve 1/2 cup of the brownie batter for topping. Line cupcake pans with paper liners. Then with the remaining batter, fill each cupcake cups about 1/2 full.
Spoon the cream cheese mixture on top of the brownie batter until each cupcake cup is 3/4 full. Finally, top each cupcake cup with a scant teaspoon of brownie batter.
Place the cupcakes in the preheated oven and bake for 20 - 25 minutes or until a toothpick inserted into one of the cupcake’s center comes out clean. Remove from heat and allow to cool completely before serving. Makes about a dozen cupcakes.
