What about picking up some new instrument? I've always wanted to learn how to play the cello. And once Im out of school and have the time, I just might do that.
Culinary Arts classes (as was mentioned) would be awesome. It's fun, engaging, and I bet you can meet a lot of new interesting people.
Or take a foreign language. Again, it's fun, engaging, and filled with interesting people. Plus, you can plan to take a trip out to the land of whatever it is you're studying.
