Start a martial art? Useful / keep fit and fun heh im well into escrima at the moment.
Try a new game / genre of game if your into computer games. MMORPG's take up a whole lot of time but as date the banana said, be careful you dont kill your social life with it.
Any of the volunteer work above, or whatever else you can find its all good.
Learn a new skill - im puttin in for some japanese and photography night courses next year. A few suggestions.
