This can be baked or smoked & is DAMN GOOD!!! Serves 4 - 6.
4 yellow onions chopped
2 & 1/3 c. scallions chopped
8 cloves garlic chopped
2 t. thyme
6 t. salt
6 t. allspice
1 t. freshly grated nutmeg
2 t. cinnamon
1 c. PICKLED jalapenos
4 t. black pepper (I use fresh cracked)
24 +/- drops Tabasco
8 t. soy sauce
1 c. vegetable oil
6 chicken pieces (I'm a breast man)
Blend all the ingrediants except the chicken until a smooth paste is formed. If planning to BBQ, save some sauce for brushing. Coat the chicken completely in the sauce & refrigerate 24 hours.
Bake in a preheated oven @ 350 for 45 minutes.
If smoking, 2 & 1/2 - 3 hours using a combination of hickory & apple chips soaked in water.
when done, move to a hot grill & slather the reserved sauce as you like. serve hot with any cold salad like potato, pasta or 3 bean...
