Mmm, roasted.
3 lbs baby red potatos
2 sprigs fresh rosemary
Sea salt and pepper to taste
Olive oil
Preheat oven to 450.
Wash, scrub, and quarter potatos.
Pinch some rosemary leaves off stems and mince.
Mix rosemary with potatos and drizzle with olive oil.
Season with salt and pepper. In a cast iron pan
or bakeproof dish, layer potatos and place rosemary
sprigs on top. Roast for fifteen minutes, reduce heat
to 350 and roast for an additional fifteen minutes,
or until done. Taste, and reseason.
