We stayed in a B&B home once, which is basically a private home with a guest suite that the owners rent out. The suite had a private entrance, and the hosts left breakfast at the door. It was perfect, and not all that expensive. It made a great base of operations for exploring a city (Seattle), and we could do what we pleased.
Some B&Bs are entirely hands-off, as far as the owners are concerned. I used to stay at a funky guest house in a really obscure town on the California coast where you checked yourself in, took your key off the hook behind the counter when you came in, and left your money in a bowl on the way out. There were folks running around who kept the place clean, but you were entirely on your own; place ran on the honor system. There were breakfast rolls and coffee in the morning, and that was it. If you wanted to cook in the kitchen, you could (and you could use their pots and dishes and utensils) as long as you cleaned up after yourself. It was a great place, if you didn't mind a little cracked plaster and walls covered with rather crude paintings of nude women (painted by the owner), and the beautiful thing was that (according to the staff) nobody ever ran out without paying or complained about having to do for themselves.
