Tufts University Jumbos!!! Gotta love a stuffed former circus animal as the mascot. Unfortunately he was destroyed in a fire in the 70's.

Seriously though, My favourite, although not very original and highly inaccurate, would be Spirit the Alaskan Malamute for the University of Washington Huskies. I'd really like to know why they always use a Malamute instead of a Husky. |
