Looking for a word similar to hedonism
But not quite. See I like to experience everything life has to offer. For instance tomorrow I'm getting LASIK eye surgery and I can't wait to see what it feels like for them to peel back the outer layer of my eyes. So is there a word for that? Wanting to experience weird and many things?

Debauchery, which has a slightly negative stigma, might fit in with the sensation of wanting to feel the of the peeling of your eyes. *shudder* But that's just me.
But as far as wanting to experience all that life has to offer, I'd choose lust. Or sensuality.

Certainly not debauchery. My sensual seeking experience is extreme or over abundant. Sensuality or empiricism perhaps. Although neither quite fit, or give off the wrong implication. I'd say empiricist fits. Problem is I'm a rationalist as well. Hmm ok so maybe sensualist.

It's probably not a word that easily rolls off others' (or my own) tongue, but you are broadly definng alacrity: an enthusiam or eager willingness to experience/submit/try.
Gaeity, vim, or zeal, work as well. I'm not very good with analogies, but just commenting upon your opening posit of "similar to hedonism" -> e.g. with the likes of eye surgery... it's not just misleading; it's nearly entirely opposite of where you might want the reader to follow you. (I got it, but it's not hard to see where one might get lost.) If you are a person who wants/wishes to experience new & exciting things, one would describe this trait as a yearning.
