I haven't read the entire thread, so my apologies for any repeats. Here are some great albums that are all (or mostly all) acoustic:

Anything by Ryan Adams (especially from Love Is Hell ie; I See Monsters, English Girls Approx., Wonderwall, Please Do Not Let Me Go, etc etc) A few from Death Cab for Cutie's last two studio albums, anything by Iron & Wine, Ron Sexsmith, The New Pornographers, The Shins, Rufus Wainwright, and there is an unsigned guy from toronto named Reid Jamieson that is very Jack Johnson meets Jeff Buckley... I swear Buckley's soul is inhabiting him. There's always Rilo Kiley's Jenny Lewis' solo stuff... great acoustic alt. country.
