There's a song by a guy named Aseop Rock called No Regrets that'll give you a taste of some of the quality work that's out there. Anyway, I'd give Tom Waits a try along with Nick Cave and the Badseeds.
My favorite Dylan is Bringing It All Back Home. Highway 61 and Blood on the Tracks are also great. I didn't care much for Freewheelin'. Second the Aesop Rock rec.

The Polyphonic Spree
The Polyphonic Spree is more than a 22-person ensemble in white robes, more than a massive orchestra of stringed instruments and horns and theremins, more than a psychedelic pop band. The Polyphonic Spree is sonic proof that broken hearts can break hearts open, that life regenerates and shines, that one adventurous voice (or two dozen) can change the world. The Polyphonic Spree can claim an album's worth of songs, but their spiritual stake in the ground runs deeper than any needle can groove. The Polyphonic Spree leaves behind a shimmering wake of smiles and sunshine footsteps. Now, more than ever, music makes a difference.

They have a new album, "Together We Are Heavy". This group can not be appreciated until you see them live. If they are ever in you area, they tour alot, GO SEE THEM!

Here's my list. I'll definitely second the Dream Theater bid. I'll concede that their lyrics can get a bit...odd...at times, but musically they're just out of this world. Lyrics aren't really what I pay too much attention to anyway. Amazing, amazing stuff to listen to.

You might also give epic symphonic metal a look. It's kind of rare in the States overall, but you can find it if you look. Some band suggestions would be (from most melodic to most metal): Rhapsody, Nightwish, Blind Guardian, Symphony X, or Iced Earth. Nightwish can get kind of heavy on the Christian symbolism, especially on their later albums (Century Child and Once) though I'm agnostic with Jewish tendancies and those are still my favorite two albums of their five. Iced Earth is probably the most intense. They have some pretty graphic imagery and definitely the least orchestration. Blind Guardian's stuff is largely based on the writings of JRR Tolkien, so if he's a fan of LotR/The Hobbit it might be a good tie in. Symphony X and Rhapsody are kind of middle of the road in terms of content, and, incidently, my least favorite of the five that I list, but I know they tend to rate higher in general than the ones I like personally. Good luck!

I was just beaten to the Polyphonic Spree! But for some great writing, lush orchestration and clever lyrics check out The Delgados www.delgados.co.uk for something just that little bit different.
