It might be more stable at a standstill, but the second you opened the throttles fully you'd get hucked off one side of the bike. Watching him rev it, and then back off as it bucks to the right was pretty amusing. I think that's one reason most bikes mount the engine transverse. Any bucking due to the rotating mass is then directed front-to-back and much easier to control. It helps that most motorcylces also have a lot less rotating mass than that monster v10. (The honda goldwing only displaces 1.8L compared to the 8.3L of the viper.)
